Tripe Patties

  • ½ k of tripe well cooked and drained
  • 1 cup white breadcrumbs
  • 1 minced onion
  • 1 tab finely chopped parsley
  • 1 well beaten egg
  • seasoned flour


  • mince the tripe and mix with the other ingredients
  • Form into balls
  • Roll in seasoned flour and flatten to about 2 cms.
  • Fry in hot oil until browned on both sides.
  • Drain on absorbent paper.

Serving suggestions
Place a thick slice of tomato, grilled, on top of each patty and a crisp rasher of bacon Serves 4.
