  • 3 cups beef broth
  • 3 tabs flour
  • 4 tabs butter
  • 4 egg yolks
  • juice half lemon
  • salt and pepper
  • 2 tabs finely chopped parsley
  • 3 lbs(1.4 ks)honeycomb tripe


  • boil tripe until tender.
  • cut into julienne strips and keep hot
  • boil the beef broth.
  • make a roux with the flour and butter and add to the broth
  • whip until well blended.
  • whip in the egg yolks and stir for about 5 mins until a creamy consistency is reached.
  • add lemon juice, salt and pepper, parsley and the hot tripe strips.
