Egg and Tripe and Salted Cabbage

  • Ingredients

  • 8 eggs
  • 6 ozs(170 Grms) pork tripe
  • 2 tabs lard
  • 1 med onion sliced
  • 2 ozs (57 grms) salted cabbage
  • 2 ozs (57 grms) Chinese salami
  • 4 large mushrooms, soaked and sliced into quarters
  • 2 tabs sherry
  • 2 tabs soy sauce
  • 1 teas MSG (optional)
  • 6 tabs chicken broth

  • Method

  • Hard boil and shell the eggs
  • Slice tripe into strips 2 cmsx5cms
  • Heat lard in a frying pan.
  • When hot, stir fry onionfor a minute.
  • Add tripe and stir-fry 1 1/2 mins
  • Add cabbage, sausage cut diagonally 1cm thick and mushrooms
  • Cook further 1 ½ mins
  • Add eggs, sherry and soy sauce.
  • Sprinkle in MSG
  • .Turn under other ingredients in pan
  • Add stock, cover, and cook a further 2 mins over mod. heat
