  • To prepare cous-cous:
  • into a large bowl pour a 500 gm packet of cous-cous
  • add generous dash of vegetable oil & half tsp salt
  • add ½ litre hot water
  • let stand until water is fully absorbed
  • using fork, rake out cous-cous on to a serving platter
  • garnish with drizzle of olive oil, flaked almonds & sultanas or other embellishments
  • serve warm

Variations

  • :place cous-cous in the top of a cous-couserie & steam-cook over a pot of vegetable stock or stew
